Easy dinner recipes to impress the in-laws!

Today, we offer to you a simple meal – complete with an appetizer, a main course and a dessert that you can prepare in a jiffy and make your in-laws go all Gaga over your culinary skills. So put on that apron and the chef’s hat hiding in your closet, and get started with us on these easy recipes that are guaranteed to impress the In-Laws!

Appetizer: Stuffed Mushrooms


Ingredients you will need:

  • 12 whole fresh mushrooms
  • 1 tablespoon minced garlic
  • 1 tablespoon vegetable oil
  • 1 (8 ounce) package cream cheese,
  • softened 1/4 teaspoon ground black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon onion powder


Note – Make sure you buy larger mushrooms. The smaller ones, if any, can also be chopped and added to stuffing.

Directions to cook:

Prepare a baking sheet with cooking spray, or use butter, as desired. Preheat your oven or grill to 175 degrees (350F) and get started on cleaning the mushrooms. A trick that is loved by top chefs is to coat mushrooms with a little corn flour, rub a little, and then wash so that all mud and grit is out completely.

Now that mushrooms are cleaned, remove the stems and chop them up finely. Heat a little vegetable oil, add the chopped mushroom stems and garlic and roast lightly. Once this has nicely browned, remove from heat and set aside. Stir in crème cheese (Remember to do this only when the garlic and mushroom mix is no longer hot). Mix well. Add the parmesan cheese, pepper, cayenne pepper and onion powder. Check for seasoning, and if required add a bit of salt.

Now take each mushroom and dry it off on a paper towel. Take a large spoonful of the stuffing and fill it in the mushroom cavity (from where the stem has been broken off). Once you have filled stuffing in all, press down the stuffing in to the mushrooms delicately with your palms.

Finally, lay the mushrooms on the baking sheet, drizzle some oil and grill for 15 minutes or until done.

2. Main Course – Pasta Carbonara

Pasta Carbonara is one of the most loved pasta dishes – exotic enough to look special and simple enough to cook in a jiffy! So this is one of the easy recipes that will always impress guests, especially in-laws.

Ingredients you will need:

  • A pack of pasta, preferably spaghetti
  • 100gms pancetta or bacon, cut in to strips
  • A cup grated Parmesan cheese
  • 100gms peas
  • 6 spring onions, chopped finely
  • 100ml cream
  • 4 eggs
  • Salt, pepper and oregano to taste

Note: Make sure you cook this dish fresh, as keeping the sauce and the pasta together and reheating it will not have the desired taste.

Directions to cook:

Boil water in a large pan. Add a pinch of salt. Once the water has come to boil, add the pasta. Make sure it doesn’t cook, you want it al-dente, or with a ‘bite’ to it. It will finally cook later with the sauce. Before the pasta cooks, add the peas so they soften as well.

In a frying pan, fry the strips of bacon or pancetta until browned and crispy. Once they are done, add onions and cook for an additional 1 minute. In a separate bowl, break the 4 eggs and whisk well. Add the parmesan cheese, pepper and salt and the cream. Whisk till everything is well blended.

Once the pasta is cooked, drain well and add the pasta and the peas to the frying pan with fried bacon and onions. Cook for additional 1 minute, till the fat from the meat generously coats the spaghetti. Turn the heat off and remove this pan off the burner. Gently add the cream, eggs and cheese mixture, stirring all the while to ensure the eggs don’t cook. What you want is a thick mixture, where the sauce thickens with the residue heat of the pan. Transfer to serving bowl, add grated cheese on top, and serve immediately.

3. Dessert New York Cheesecake

Ingredients you will need:

  • 15 digestive biscuits
  • 2 tablespoon melted butter
  • 4 packs of cream cheese
  • 1 cup while sugar, powdered
  • 1 cup milk
  • 4 eggs
  • 1 tablespoon vanilla essence
  • ¼ cup all purpose flour

Note: It is best to prepare this dessert a day in advance.

Directions to cook:

Grease a 9 inches baking tin and preheat your oven to 175 degrees (350F). Crush the biscuits to form a crunchy mixture and add the melted butter to it. Press this mixture at the bottom of the baking tin.

In a bowl, mix the sugar with cream cheese to form a smooth batter. Add the eggs, one at a time and keep whisking to incorporate each egg well. Mix in the essence, milk and the flour and whisk further. Pour this filling over the crust of biscuits and butter and bake in the oven for 1 hour. After that, leave in the oven (with door closed) for 5 hours and chill in the fridge for another 2-3 hours before you serve. To make it more exotic, you can chop fruits and spread them generously over the cake while serving.
