  • 2 tbsp butter
  • 1/2 onion finely diced
  • 2 cloves garlic
  • 3/4 tsp dried Italian herb seasoning
  • 3 tbsp all purpose flour
  • 2 cups milk
  • 2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1 cup cheddar cheese
  • 1 plum tomato
  • 2 tsp pesto
  • 2-1/2 cups pasta
  • 1/4 cup parmesan cheese


  1. You can use either a Dutch Oven or a simple large saucepan for this recipe. To begin with, melt the butter in the pan but make sure you use only medium heat, or the butter will burn rapidly. As the butter melts, throw in the onions and garlic and toss gently. Sprinkle with a generous amount of Italian herb seasoning and stir to make sure the paste doesn’t stick to the bottom of the pan. Cook until the onion becomes translucent and the aromas of garlic fill your kitchen. The entire process should take no more than 3 to 4 minutes at max.
  2. Next step, add the flour and continue stirring to ensure it doesn’t stick to your pan. Gradually add in milk and mustard and continue to whisk the mixture. Let it simmer at low to medium heat from 4 to 5 minutes. Then add the Cheddar cheese and whisk some more to ensure no clumps are formed. The aim is to form a smooth paste. Once that is done, take it off the heat and let it sit so the sauce thickens.
  3. In a separate bowl, mix the tomatoes with the pesto. Take a large pot and boil water. Add a little salt and throw in the pasta. Cook as per directions mentioned at the pack of the pasta packet. Once the pasta is semi cooked or al-dente, drain it and set it aside.
  4. Now put the saucepan with the cheese sauce back on heat. Add the pasta and the tomato-pesto sauce. Toss to coat the pasta evenly with the sauce. Simmer for a minute. Turn off the heat and serve hot, sprinkled with some extra Parmesan cheese grated on the top. 

    Additional Tip: If fresh basil is not in season, use a pre-prepared pesto sauce instead. It works just as well!
